Chili with Beans

Costs ~$30 and takes ~3 hours to make

Ingredients

  • ground chuck (2 lbs)
  • 4 sweet Italian sausages, uncased (~1 lb)
  • bacon pieces (2 Tbsp)
  • 2 caribe peppers, seeded & chopped
  • 6 mini sweet peppers, seeded & chopped
  • 1 sweet yellow onion, chopped
  • fresh oregano leaves, chopped (3 tsp)
  • fresh basil leaves, chopped (3 tsp)
  • garlic, pressed (1 Tbsp)
  • kidney beans in spicy chili sauce (15 oz can)
  • Great Northern beans, drained (15 oz can)
  • diced fire-roasted tomatoes (28 oz can)
  • double-concentrated tomato paste (5 oz tube)
  • Guinness dry stout (1 cup)
  • Worcestershire sauce (1 Tbsp)
  • TABASCO Scorpion Sauce (2 tsp)
  • Better Than Bouillon Organic Beef Base (4 tsp)
  • chili powder (1/4 cup)
  • cayenne powder (1 tsp)
  • paprika (1 tsp)
  • ground cumin (1 tsp)
  • white sugar (1 tsp)
  • ground black pepper (1 tsp)
  • salt (1 tsp)

Instructions

  1. In a large stock pot, brown the meat
    • ground chuck (2 lbs)
    • 4 Italian sausages
  2. After the meat has browned, drain the excess grease.
  3. Add all the remaining ingredients to the pot
  4. Simmer on low for 2 hours, stirring occasionally
