Hummus Tehina
Israeli-Style Hummus
Costs ~$4 and takes ~35 minutes to make
Ingredients
- 1 lemon
- 15 oz. canned chickpeas
- tahini (1/2 cup)
- garlic (2 cloves)
- olive oil (2 tbsp.)
- salt (1/2 tsp.)
- baking soda (1/2 tsp.)
- cumin (1/2 tsp.)
- sumac or paprika (optional)
- chopped parsley (optional)
Instructions

In a medium saucepan, combine
- chickpeas
- baking soda (1/2 tsp.)
- water (2 cups)
Boil for 20 minutes.

In a small bowl, mix
- lemon juice
- garlic (2 cloves), peeled and pressed
- salt (1/2 tsp.)
Let the mixture rest for 10+ minutes (until the chickpeas finish boiling).

After the chickpeas finish boiling, drain and rinse them in a fine-mesh strainer

In a food processor, combine
- tahini (1/2 cup)
- cumin (1/2 tsp.)
- olive oil (1 tbsp.)
- the lemon, garlic & salt mixture
- boiled and drained chickpeas
Blend the ingredients while drizzling ice water (4 tbsp.) until the hummus is smooth and fluffy

Transfer the hummus into a serving container and garnish with
- a drizzle of olive oil (1 tbsp.)
- a sprinkle of sumac or paprika
- chopped parsley
