Hummus Tehina

Israeli-Style Hummus

Costs ~$4 and takes ~35 minutes to make

Ingredients

  • 1 lemon
  • 15 oz. canned chickpeas
  • tahini (1/2 cup)
  • garlic (2 cloves)
  • olive oil (2 tbsp.)
  • salt (1/2 tsp.)
  • baking soda (1/2 tsp.)
  • cumin (1/2 tsp.)
  • sumac or paprika (optional)
  • chopped parsley (optional)

Instructions

  1. In a medium saucepan, combine
    • chickpeas
    • baking soda (1/2 tsp.)
    • water (2 cups)
    Boil for 20 minutes.
  2. In a small bowl, mix
    • lemon juice
    • garlic (2 cloves), peeled and pressed
    • salt (1/2 tsp.)
    Let the mixture rest for 10+ minutes (until the chickpeas finish boiling).
  3. After the chickpeas finish boiling, drain and rinse them in a fine-mesh strainer
  4. In a food processor, combine
    • tahini (1/2 cup)
    • cumin (1/2 tsp.)
    • olive oil (1 tbsp.)
    • the lemon, garlic & salt mixture
    • boiled and drained chickpeas
    Blend the ingredients while drizzling ice water (4 tbsp.) until the hummus is smooth and fluffy
  5. Transfer the hummus into a serving container and garnish with
    • a drizzle of olive oil (1 tbsp.)
    • a sprinkle of sumac or paprika
    • chopped parsley
